TGIF Treat–Puff Pastry Apple Pie

Three little words…frozen puff pastry. This ingredient is right up there with silicone baking utensils for convenience and user-friendliness.

The other three little words I love are “pie for breakfast.” Don’t wait for Thanksgiving to serve yourself something fun.

Cut a 6″ circle of frozen puff pastry and some strips for the lattice top. Spoon a good fruit jam or apple jelly on the base and pile on a mix of cut apples in cinnamon, sugar, and lemon juice.  Don’t forget the pats of butter! Weave your lattice over the top, bake for 20 minutes at 400ºF, and you’re good to go.

This will be my last post for a week. We’re off to the Jersey shore for our “summer” vacation. (The news from the boardwalk at Seaside Heights is sobering, to say the least!) I’ll be back Monday, September 22 with the answer to the $64,000 question:  which is better? Scrapple or pork roll?
