When you start a long car ride at 7 in the morning, what can you bring besides a thermos of coffee?


The obvious is a toasted “everything” bagel, lox, and cream cheese, a security blanket for us Manhattanites who fear, once we leave this island, we will be forced to subsist on white toast and Spam. But that’s too easy….


I like freshly scrambled eggs flavored with green peppers, onion, and cilantro, wrapped in a whole-wheat tortilla that’s been sprinkled with a generous handful of Monterey Jack cheese. Super-easy to make as many as you need. Microwave each for 45 seconds, wrap in tin foil, and you’ve got a delicious bundle of protein that’ll keep you from getting hungry and having to pull into a rest stop where fast food rules and the guy next to you on line at McDonald drools.
