Homemade Hot Pocket

I’ve never had a commercially prepared Hot Pocket, but I like the idea.

10 minutes at 400° -- not exactly the instant gratification of the microwave, but you know exactly what you're eating.

Enclosed in two rectangles of puff pastry is grainy brown mustard, a slice of Swiss cheese, and two slices of fresh tomato seasoned with dried basil, salt, and pepper.

A slice of cheese is just a slice of cheese…melted, cheese becomes this intensely satisfying, utterly irresistible ingredient. I see you all nodding your heads…obvious, yes, but do we appreciate it enough? Here’s to the cows who make the milk to craft into cheese to sate my craving.
