TGIF Treat–Huevos al Plato

What do you do when your dog wakes you up at 5:30 a.m.? I read cookbooks. I’m enjoying Betty Wason’s 1963 Art of Spanish Cooking. She once counted how many egg dishes were on a Málaga menu and came up with 36. She shares 22 in this book and every one looks delicious.

This morning I tried a variation on her Huevos al Plato (Eggs in Ramekins); instead of ham and onion, I sauteed green olives, grape tomatoes, and red onion in olive oil (amazing what you find digging around in the vegetable drawer). Break two eggs over that in a ramekin, season with salt and pepper, and bake at 400° until the whites are set (took me between 15 and 20 minutes this morning). Buenos Dias!

And Gracie? Such a thrifty Welshwoman, she nabbed the egg shell before Chuck could stop her and wolfed it down. The Spaniards, used to lean times during their civil war, Franco’s dictatorship, and now in their economic doldrums, would see nothing wrong about that.
